According to Salt & Straw CEO Kim Malek, Lake Oswego made sense, both for its pedestrian-friendly downtown and an existing connection — the company has run an ice cream food cart at the city’s farmer’s market for several years.
“In a lot of Portland suburbs, it’s hard to find really thriving, walkable community centers,” Malek said. “I love that about this part of Lake Oswego, and we just decided that it would be a good fit for us to take Salt & Straw on the road.”
